Asian Napa Ramen Salad - 2 Ways!

Cabbage salads are so very easy to make and so delicious. I thought these two would be great to share.  I have to admit I haven't tried the Asian Cabbage Salad with red and green cabbage yet, but I do plan on trying it soon. I have tried the Asian salad with Napa cabbage and it is terrific Either way, this salad is great by itself or by adding chicken, rolls, and maybe a good glass of wine to make it a full dinner. The ingredients for both salads are exactly the same, except the cabbage salad uses red and green cabbage and the Napa salad uses Napa cabbage, of course. Adding the almonds and ramen make it extra crunchy, which is how I like salads and the mandarin oranges give it a citrus kick.
Asian Napa Ramen Salad (with Napa cabbage)
Asian Napa Ramen Salad (with red & green cabbage)

Napa Salad with Ramen & Mandarin Oranges
Ingredients:
  • 1 Napa cabbage, shredded
  • 3 T. butter
  • 1/2 cup slivered almonds
  • 1 cup oil
  • 3 T. soy sauce
  • 5 green onions, sliced fine
  • 1/2 cup sesame seeds
  • 2 packages ramen noodles, crushed
  • 2/3 cup sugar
  • 1/2 cup vinegar
  • 2 chicken breasts (cooked and cooled) optional
  • 1 small can mandarin oranges
  • Carrot slivers (optional)
Directions:
  1. Saute' almonds and  broken up ramen noodles in butter until they start to brown. Add sesame seeds. Stir constantly until brown and crisp.  Set aside.  
  2. Mix cabbage and onions in serving bowl; 
  3. In separate container mix oil, sugar, soy sauce and vinegar.  Shake well. 
  4.  Refrigerate until 20 minutes before serving time.  
  5. Pour dressing over cabbage mixture and chicken.  
  6. Add noodle mixture and toss just before serving.  Sprinkle with mandarin oranges and carrot slivers. (optional)
I love this salad...crunchy, fruity and the sauce brings all the flavors out...
Red & Green Cabbage Salad with Ramen & Mandarin oranges
Ingredients:
  • 4 C. shredded green cabbage
  • 2 C. shredded purple cabbage
  • 2 whole green onions
  • 1 15 oz. can mandarin oranges, drained
  • 3 T. butter
  • 3 oz. chicken ramen noodles (throw away the seasoning packet)
  • 1/4 C. sliced almonds
  • 1/4 C. sesame seeds
  • 1/2 C. vegetable oil
  • 1/3 C. sugar
  • 1/4 C. white vinegar or rice vinegar
  • 1/2 T. soy sauce
  • 2 chicken breasts (optional)
Directions:
  1. Saute' almonds and  broken up ramen noodles in butter until they start to brown. Add sesame seeds. Stir constantly until brown and crisp.  Set aside.  
  2. Thinly slice or shred purple and green cabbage. Set in a bowl.
  3. Add drained mandarin oranges and sliced green onions to bowl with cabbage.
  4. Place oil, soy sauce, vinegar, sugar to a mason jar and shake until sugar is dissolved.
  5. Pour salad dressing over cabbage and onion. Refrigerate
  6. If you are making this salad as a main course, add chicken at this point.
  7. Just before serving, add the ramen mixture and toss. 
I love the fact that regular cabbage is used for a change of pace. Plus regular cabbage holds up better when the dressing poured on. Both salads are great regardless of the type of cabbage you use.

Lets face it, salads are not only good for us, but with so many options these days with fresh veggies they can make the meal. I love making homemade rolls. A great summer light supper, rolls and this salad with chicken added. So yummy and so easy...I like easy!
